Since 2007 I have been eating gluten free. In the beginning I mostly bought the gluten free food I needed, but with time, when it became more of a life style, I started to bake and make my own bread, cakes and so on. I have always appreciated food and I love to cook, but the awareness living gluten free has brought to my life, is probably what I am most grateful for. It has forced me to listen to my body, feel the difference between bad and good foods, and it has really taught me to enjoy homemade meals.
Bread and desserts are some of my favorite kitchen endeavors. I love the smell of homemade bread and even more to eat it. Dessert is something I especially like to make for others. I just love the expression someone gets when they take that first bite of a really yummy dessert.
When I started out baking I always used a recipe. The bread in these pictures is one of those “let’s see what we have in the cupboard” kind of bread. I have a basic recipe I use and then I change it, according to what I might have at home. I like baking this way, but I can’t give you the exact recipe here. I can tell you, though, that some of my added ingredients are oats, linseed, sunflower, buckwheat, and rice flour.
BASE RECIPE: makes 1 loaf
1 cup water
15 g yeast
4 tbsp olive oil
1 tsp salt
1 tbsp honey
2 1/2 cups gluten free flour
Let rise for 1 hour.
I sometimes let it sit for another 30 min in the baking tray before baking it.
Bake about 30-40 min. at 220 degrees celsius.
